To answer myself, some day, I'm going to try following recipe,
found here. When I do, I'll report back on how it goes.
Perfect Peanut Sauce
1/4 cup peanut butter (natural, no sugar added kind)
2 teaspoon soy sauce
1 Tablespoon brown sugar
1 Tablespoon fresh lemon or lime juice
1/4 cup coconut milk (lite is fine, if you prefer or substitute water)
1/4 cup water
red chili flake to taste
chili garlic sauce to taste or 1 clove crushed garlic
Optional:
sesame oil
curry paste
rice wine vinegar
fish sauce
grated ginger
shallots sauteed till brown in oil
Worcestershire sauce (Raedia's idea)
Combine all ingredients with a whisk in a small bowl, adding the water last. Pour into a small saucepan and heat over medium heat until sauce begins to bubble and thicken. Experiment with this sauce adding a teaspoon at a time of one the optional additions and tasting as you go. Serve hot or cold.

Well, I finally got around to making some peanut sauce tonight. I didn't have any chili flakes. I went with the garlic option and added ~20 drops of Sriracha hot sauce to substitute for the chili. The only optional ingredient I added was 2-3 tsp of chopped shallots, which I sauteed in the saucepan before adding the sauce.
Before cooking, it tasted pretty good. After cooking, though, the sauce thickened considerably as it cooled, so I added some water to thin it out a bit. Maybe this was a mistake...I probably should've tried to heat it up again. In any case, the end result was pretty weak. Whether this was a result of my watering it down or not using enough sauce, I'm not sure. Also, I think sauteeing the shallots directly in the saucepan was a mistake -- I get the feeling the pan was way too hot when I added in the sauce.
Anyway, I'm willing to give it another try. Maybe next time, I won't screw it up and it'll be decent.
